Grilled Wild Salmon with Apricot Mustard

I am so happy to share this recipe with you today because it is coming into season and it happens to be from the most gorgeous new book by my friend Heather Christo, “Generous Table.”

Salmon with Grilled Fruit

“Grilled Wild Salmon with Apricot Mustard”

There are at least a dozen different types of salmon, each native to it’s own region of the world. While they are all delicious, I try to buy the varieties that are local, and always spend the extra dollar for wild salmon.

Cook Time35 minutes
Total Time45 minutes

Ingredients

  • 1 tablespoon butter
  • 1 shallot finely minced
  • 2 garlic cloves finely minced
  • 1/4 cup white wine
  • 1/4 cup apricot jam or preserves
  • 1/4 cup spicy whole-grain mustard
  • kosher salt
  • 1 wild salmon side about 2 pounds
  • kosher salt
  • fresh chives or parsley leaves for garnish

Instructions

  • First make the apricot-mustard glaze: Heat the butter in a small saucepan over medium heat until melted, but not browned. Add the shallot and garlic, sprinkle with salt and sweat the shallot over medium-low heat until soft and tender, 5 to 6 minutes. (Take care not to brown the shallots.)
  • Add the white wine and cook until most of the wine has evaporated, 2 to 3 minutes. Add the apricot jam and mustard and stir until well combined. As the jam starts to melt, continue to stir and cook for 3 to 4 minutes. Remove the sauce from the heat and set aside to cool.
  • Put the side of salmon, skin side down, on a large sheet of foil. Season the salmon generously with salt, and then spread half of the apricot- mustard glaze on the salmon. Set aside and reserve the extra sauce.
  • Preheat the grill or a grill pan on medium heat.
  • Put the salmon, still on the sheet of foil, on the grill. Cook until the salmon is just cooked through but still bright pink in the center— depending on the thickness of the salmon, this should take between 7 and 10 minutes.
  • When the salmon is almost finished cooking, slather it with the rest of the glaze and let it melt into the fish.
  • When the fish is fully cooked, transfer it from the foil to a platter and garnish with the fresh chives or parsley.

    sipping cold beer with the neighbors outside while watching the kids play fetch the duck (its a stuffed animal so no real ducks are hurt due them being out of season) and listening to them laugh and giggle.

    My favorite thing about spring, is harvesting all the ripe loquats from the trees in my yard and around my neighborhood. Every year I have a little jam making party, and distribute the goodies to family, neighbors, and friends. So tasty, and tart yet sweet. This years has been especially bountiful. Spreading the love all around! (ha get it?)

    I think I’ll try the jam with this recipe! Yum!

    Freshly mowed grass…spring onions and all! Reminds me of springs in my childhood when my dad would mow grass the day before Easter and we would gather up the clippings and build an Easter bunny nest. It was a great thrill to find goodies tucked in the nest the next morning! I’m also with Chip…tilling and planting a new garden. Turning over dirt feels and smells so-o-o-o-o-o good!

    Watching the bird migrations, especially the warblers, pasque flower blooms and late spring snows, we have one going on now so might as well enjoy it.

    My favorite part of Spring is the intensely perfumed yellow flowers surround the outside of my door on the porch right now. I wish I could bottle the beautiful aromas that greet me every time I go in or out of my house. We have a bird house that is also near our door has an entrance that is shaped like the state of Texas! We get a kick out of watching momma bird build her nest and take a peak a couple of times a week hoping to see the tiny speckled eggs hatch into little baby birds. We can’t wait to see them take flight!

    Flowers! Nothing makes me happier in the spring than drinking in the scent of flowers growing as I walk around doing mundane daily stuff. It definitey puts a little spring in my step. 🙂 Thanks for the giveaway!

    My favorite things about the spring is seeing plenty of flowers and more sunshine. I could not be able to enjoy these things in other seasons. I would get a chance to smell the flowers and admire its beauty. More sunshine means more fun since I could be able to stroll more without worrying about the snow, rain or anything else.     My favorite thing about Spring is the ability to eat my favorite vegetable, asparagus — it is plentiful and relatively inexpensive in Spring, and I eat asparagus at least 3 or 4 times a week when it is in season.

    Ha! Spring! At 8000′ in Colorado we’re still getting snow! My greenhouse is full of baby plants getting ready for a headstart on our short growing season. I’m always looking for the 1st signs of Spring. Between each new snow crocus, species tulips, and daffodils are coming up. Blue birds and robins have arrived – can’t wait for the first hummingbird sound (mid-May). And new baby chicks, currently in my dining room.

    Very very best thing about spring is the hunt for morels!! Spring is the most exciting foraging season – it seems like food is simply everywhere! 🙂

    I enjoy getting outside and finally getting some red North Carolina dirt under my fingernails as I plant my yearly garden. It’s just something that seems close to my heart that my dad and I have done since I was a kid and it always seems to be the one thing in my life that reminds me that it’s finally Spring.
