

I just got a very special delivery. It came from the mountains of Wyoming a place I’ve never been to, but now am determined to visit. The reason is that these mountains in Wyoming produce truly exceptional beef, the kind you still think about several weeks after you’ve consumed it.
It is probably because the cows are very, very happy cows. For starters, they get to live here:

On 595,000 acres of pure green luscious grass. They are 100% grass fed organic cows…

This jerky was particularly spectacular. The right kind of sweet and tang to suit my taste buds…

And the ground beef!!! I uttered some strange sound when I took my first bite.

In fact it smelled so good, that Willy the cat took time away from his busy bunny killing schedule to come investigate the source of the intoxicating aroma.
While it cooks, let me take you on a steak journey…
Here it is, the beautiful thing that it is…

Look at this bone marrow. There are few things better than roasted bone marrow. They love that sort of thing in France but I don’t see it often enough here. We need to start roasting more bone marrow. It’s going to go to waste otherwise and that is gastronomical tragedy.

And look at this marbling! The perfect balance of fat and protein. Who ever said grass-fed didn’t have enough marbling?!
Okay, the burger is done.

The perfect crusty outside and the slightly raw inside. Just the way I like it.

I think you should go take a visit to my friends in Wyoming. Tell my friend Rod I sent you. And tell him you’re ready to taste the best beef you’ve ever eaten. No pressure Rod.

Yes, all burgers should be medium rare. It should be written into law that they can’t be more cooked than that. haha
